Easy Vegetable Beef Soup

1lb of beef cubed
1 gal of water
1 can (about 6-8ozs) of Hunts tomato paste
1 bag of frozen mixed vegetables (or fresh sliced if you prefer)
Pot herbs
Salt and pepper to taste
Olive oil
Cooked broad eggs noodles (rather than beef for vegetable soup) 

1. Using a 8Qt pot, pour in a small amount of olive oil (to coat the bottom of the pan).
2. Brown cubed beef in the pot and oil. Drain.
3.Add water, tomato paste and stir well.
4. Add frozen veggies and pot verbs. Cover on medium heat for at least one hour.
5. Add salt and pepper to taste and enjoy! I love to serve this with rye bread too!
